The journey from cherry to green bean is delicate. We utilize three distinct processing methods to extract different characteristics from the bean.

Three Methods, Infinite Possibilities

Washed, Honey & Natural

Each processing method brings out different flavor characteristics from the same coffee cherry. Our mastery of all three methods allows us to create diverse and complex flavor profiles.

Washed Process

The fruit is removed before drying, resulting in clean, bright, and crisp flavors with pronounced acidity.

Honey Process

Some mucilage remains during drying, creating a sweet, complex cup with balanced acidity and body.

Natural Process

The whole cherry is dried intact, producing fruity, wine-like flavors with heavy body and sweetness.

Sun-Dried with Care:

Traditional Drying Methods

We believe in the power of nature to finish the job. We use a Sun-Drying method, allowing the beans to dry slowly under the Colombian sun. This traditional technique preserves the cellular structure of the bean.

Sun-drying locks in the flavor and ensures a longer shelf life and a cleaner cup. Our drying patios are carefully monitored to ensure even drying and prevent over-fermentation.

Quality is not an accident; it is a discipline. We implement a zero-tolerance policy for defective or immature beans. Each batch is inspected multiple times during processing.

From hand-picking only ripe cherries to careful sorting after drying, every step of our processing is designed to ensure that only the finest beans make it into your cup.
